Recipe: Fluffy Pancakes feat. Rude Health Soya Drink
Don't you just wake up sometimes and feel like having pancakes? We do! In fact, in UK, they celebrate Pancake Day every year. Pancake Day (known as Shrove Tuesday) is the traditional feast day before the start of Lent on Ash Wednesday. Lent – the 40 days leading up to Easter
The ingredients for pancakes can be seen to symbolize four points of significance at this time of year:
- Eggs: Creation
- Flour: The staff of life
- Salt: Wholesomeness
- Milk: Purity
But nowadays, we just like to use this day as an excuse to eat pancakes on a weekday. In UK, their pancakes are completely flat (i.e. crepes) but we like our pancakes fluffy like the recipe below. Enjoy watching!
INGREDIENTS
1/2 cup Rude Health Soya Drink
1/2 cup + 2 Tbsp All-Purpose Flour
1 Tbsp Coconut Oil
1 Medium Banana
1 Tbsp Sugar
1/2 Tbsp Baking Powder
1/8 tsp Baking Soda
1/4 tsp Salt
INSTRUCTIONS
- Put all the ingredients into a blender or food processor
- Blend until everything is smooth and well combined
- Let batter rest for at least 10 minutes
- Lightly grease a hot pan or griddle
- Pour in a ladle of pancake batter
- Let it cook until bubbles start to form on top
- Gently flip and allow to cook for 2-3 more minutes
- Repeat the process until the batter is finished
- After cooking, it’s time to plate up! Feel free to add whatever toppings you like. We recommend some sliced bananas, a drizzle of your favorite syrup, some granola, a spoonful of peanut butter, and a sprinkle of Raw Bites chia seeds. Enjoy!
