Recipe: Coconut Crisps (Vegan & Gluten-free)
We partnered with Earth Desserts (the maker of amazing vegan brownie brittle) to worth with our Rude Health drinks and come up with amazing vegan desserts. She came up with three (3) recipes and here's the second one.
COCONUT CRISPS (Vegan & Gluten Free)
1/2 flax egg (1 1/2 tsp ground flax seed combined with 1 1/2 tbsp warm water, leave for 5 minutes)
1/2 cup vegan butter (can be swapped with coconut oil)
1/2 cup coconut sugar
1 tbsp maple syrup
1/3 cup Rude Health Oat Milk
1/2 cup almond flour
1/2 cup dessicated coconut
1/2 tsp baking powder
1/4 tsp salt
- Preheat oven to 150C
- Prepare the flax egg
- Mix together the butter or oil with sugar. Add in maple syrup and milk
- Mix together dry ingredients. Add wet mixture to dry.
- Mix until well-combined.
- Scoop into 1tbsp portions and flatten slightly. Leave cookies 2 inches apart to prevent them from sticking together as they will spread out.
- Bake for 15mins or until golden brown.
